Italian Inspired Linguine with Tuna

Ingredients:

1 lb linguini pasta
1/4 cup extra-virgin olive oil, plus 1/4 cup
1 small or 1/2 medium onion, chopped
2 cloves garlic, minced
1 6oz. pouch Sea Fare Pacific Albacore Tuna
1 pint (2 cups) cherry tomatoes, halved
8 oz artichoke hearts quartered
2 tablespoons capers, rinsed and drained
2 tablespoons chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper to taste
Fresh Lemon juice to taste
Top with grated Pecorino Romano cheese

Ingredients:

1 sweet potato, mashed and seasoned with  cinnamon
1 stalk celery, finely chopped
1/2 carrot, grated
2 zucchinis, grated
1 red onion, diced and browned
2 egg whites
